“Kamairi,” or pan-fired green tea, is made using an ancient method introduced to Japan about five hundred years ago (in the 16th century). While most Japanese green teas today are produced by the steaming method, teas made with the kamairi technique account for only about 1% of all green tea in Japan. Among them, the “hand-roasted kamairi” process—using a wood-fired iron kettle to repeatedly roast and roll the leaves by hand—is an extremely rare practice that preserves the original form of this craft. The tea leaves, gently polished through contact with the kettle, take on a soft silvery sheen and yield a clear golden liquor of remarkable transparency.
